Raw Vegan Waffles and Strawberry Jam
Let's face it, who doesn't love warm, buttery waffles smothered in syrup or jam? Sadly though yummy, they have little nutritional benefits and or actually pretty unhealthy! This is why I'm over the moon to being able to create waffles that are not only super healthy they're yummy too! I actually created a second recipe on shown on the video that in all honestly is far more authentic in taste and texture.

WAFFLE RECIPE I (Plantain Base)
Ingredients:
- 4 ripe plantains
- 1/4 cup oat flour
- ½ TSP sea salt
- 2 TSP psyllium husk powder (not flakes)
Directions:
Put all the ingredients (except the psyllium husk powder) into a blender and blend until smooth. Place psyllium in blender and mix by hand before actually blending (it’s important not to over blend). Transfer the dough into the silicone molds and smooth out the surface. Place the waffle molds into the dehydrator and dehydrate for 12 hour or more until the desired texture is reached (some like their waffles soft, others prefer a crunchy texture). Release the waffles from the molds and place them onto a plate.
WAFFLE RECIPE II (Corn Base)
Ingredients:
- 3 cups raw sweet corn kernels (frozen and thawed)
- 1 cup dried apples or dried white mulberries
- ½ TSP sea salt
- 1 Squirt Vanilla Stevia Sweet Drops
- 4 TBSP lemon juice
- 2 TSP psyllium husk powder (not flakes)
Directions:
Place mulberries into your high speed blender and blend into a powder and remove from blender. Place corn into the blender and blend until smooth. Add mullberry back into blend with the corn and all the remaining ingredients (except the psyllium husk powder) and stir by hand before blending together. Place psyllium in blender and mix by hand before actually blending (it’s important not to over blend). Transfer the dough into the silicone molds and smooth out the surface. Place the waffle molds into the dehydrator and dehydrate for 12 hour or more until the desired texture is reached (some like their waffles soft, others prefer a crunchy texture). Release the waffles from the molds and place them onto a plate.
